Anytime Breakfast Casserole
1 lb lean ground organic turkey
1/2 teaspoon chili powder
12 large organic eggs
1 medium sweet potato (peeled and sliced thin)
1 cup baby spinach
½ cup reduced fat feta cheese
Salt & pepper for seasoning
Additional Toppings: tomatoes, diced onions
Preheat the oven to 375 degrees. Grease a 9 x 9 baking dish with cooking spray.
In a skillet, cook the meat until it begins to brown. While the turkey is cooking, peel and slice your sweet potato. Line the bottom of the prepared baking dish with thinly sliced potatoes.
In a medium bowl beat the eggs with a whisk and season with salt, pepper & chili powder.
Top the potatoes with the cooked turkey. Layer the spinach and any additional toppings and pour the egg mixture on top.
Place the dish in the oven and cook for 35 minutes or until the edges of the egg begin to brown and the casserole is firm throughout. Remove from the oven, sprinkle cheese on top and bake for an additional 5 minutes.
TIP: Use fresh parmesan reggiano for a sharper taste OR serve with diced avocado and salsa for a Mexican dish.
