Beet Superfood Salad

Beet Superfood Salad
1/2 cup cooked quinoa
1 1/2 cups water
2 medium beets – peeled and riced
2 heaping cups arugula
1/2 cup slivered almonds
1 avocado, diced
1 cup cooked edamame – out of the pod

Dressing: 1/4 cup apple cider vinegar, 2 tbsp lime juice, 1 tbsp chopped fresh mint, 2 tbsp honey, salt & pepper.

Combine all ingredients in a large bowl. Stir in dressing thoroughly. Top with 1 tbsp reduced fat feta or goat cheese for a bit of tanginess. ENJOY!
