Busy people, easy meal….

Everyone’s schedules are crazy busy at the time of year – work, school & school activities, exercise, kids sports, meetings, volunteering, kids homework, other family obligations, brownie meetings, church events, dancing at a Zumba event for 3 hours straight to raise money for breast cancer…..you name it, we are all doing it!

So, in order to feed our families (especially at dinner time) we need easy healthy meals, right?!?!

Here is a SIMPLE meal that I made yesterday afternoon to have for dinner last night. I will say that I am usually not a huge crock pot fan, but they are easy and convenient, when time is so limited. I cooked this for 5 1/2 hours and served with taco toppings (cheese, avocado, whole wheat wraps, tomatoes)

*4 organic chicken breasts

*2 cans black beans – rinsed

* 1 jar of salsa (16oz)

*1 package of taco seasoning OR add lime juice, chili power, garlic power, paprika and red pepper flakes

*1 bag of frozen corn – thaw before adding

  1. Yum! Thanks for sharing! Here’s one that’s good too:

    4 frozen chicken breasts 1 onion, sliced 1 green pepper, sliced 1 pkg fajita seasoning

    Prepare seasoning as directed on pkg (add oil and water). Combine all in crock pot. 4 hours on high. Shred the chicken and place in wheat wrap w/ favorite fajita toppings.
