Chicken Salad

4 oz chicken (1 breast cut up or you can use canned if need be)
1/4 cup celery, chopped
1/4 cup sweet onion, chopped
1 tbsp plain greek yogurt
1/2 tsp olive oil mayo
1 tbsp craisins
1 tbsp chopped walnuts
salt, pepper, dried parsley
juice of 1/2 lemon

Mix all ingredients together in a bowl. Serve in romaine lettuce wraps or open-faced on whole grain bread of choice.

TIP: If you have time to let it sit in the fridge for at least 30 minutes, flavors will come together better 🙂
