Chocolate PB Pancakes

Chocolate and peanut butter for breakfast? Yes, please!

2/3 cups gluten-free oats (I get mine at Trader Joe’s)
1 ½ tbsp chia seeds
2 tsp cinnamon (or pumpkin pie spice)
2 tbsp PB2 (or 1 tbsp almond butter – add to wet ingredients when preparing)
1 heaping tbsp unsweetened cocoa powder
1 ripe banana
1 egg
2 tbsp plain organic Greek yogurt
1 tsp vanilla extract
¾ cup coconut milk (or almond milk)

Mix all dry ingredients together in a magic bullet or food processor.
Blend all wet ingredients and add to the dry mixture.

Spray griddle or pan with coconut oil cooking spray (I get this at Trader Joe’s too)
Top pancakes with chopped walnuts, fruit and/or 100% pure maple syrup for a delicious bite of heaven!
