Christmas Week Treats!

‘Tis the season for baking & making cookies for Santa and to enjoy home-baked goodies! 🙂

The thing to remember is not to OD on the sugar. Bake or choose some of the things that you REALLY enjoy!

If you are heading out to a family gathering or Christmas dinner – it is truly not necessary to see how many cookies you can pile your dessert plate before they tumble to the ground on the way back to your seat. Take a few bites of the desserts you LOVE and step away. Those dessert calories add up quickly and within an hour will put you into a sugar-induced food-coma that you will feel until the next morning, like a bad hangover!

One of my favorites is peppermint dark chocolate…you can find some good brands at Whole Foods or it is easy to make your own at home and amazing to enjoy slowly with a cup of strong, hot coffee.

Or try one of these delicious gluten-free treats I made over the weekend for Santa.  They are SO yummy, I enjoyed a couple with my coffee this morning for breakfast.

Flourless Peanut Butter Oatmeal Cookies

  • 1 1/3 cup GF oats
  • 4 tbsp PB2
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 tsp baking soda
  • 2 large organic eggs
  • 2 tsp vanilla extract
  • 1 cup all natural peanut butter, room temperature (I use Smuckers)
  • 10 tbsp light brown sugar
  • 1/2 cup dark chocolate chips

Mix all dry ingredients in a bowl. Beat eggs in a separate bowl. Add sugar, vanilla and peanut butter to the eggs. Combine all ingredients and chill in the fridge for 30 minutes.

Preheat oven to 350. Line baking sheets with parchment paper. Spoon 1-2 tbsp cookie mixture onto baking sheet and flatten with the back of the spoon into cookie shapes. Bake for 10-12 minutes. Let cool and enjoy!
