Citrus Goat Cheese Salad
1 1/2 cups arugula
1 oz crumbled goat cheese
1/2 grapefruit, divided into segments (OR if you don’t like grapefruit, use orange)
3 oz grilled skinless chicken breast
1 tbsp balsamic vinaigrette
1 tsp chopped walnuts
Tip: make extra chicken for tomorrow’s lunch!
