Don’t Be Afraid of the Fish

I have blogged several times on fish and here I go again 🙂 Really because it is a light, delicious and healthy meal for you!! It is not that difficult to make and I had several people commenting on my Facebook post from yesterday, so I wanted to share.
This recipe is super simple and the perfect meal with a side salad or some roasted veggies.
Mediterranean Baked Cod
1 wild caught cod filet ( I get about a pound and either share or have it for lunch the next day on a salad)
1 tbsp mayo ( I use this canola oil based “mayo” from Trader Joe’s anytime a recipe needs it)
1/2 cup of sliced cherry tomatoes
1/2 sweet onion, sliced into rings
Pink salt and fresh pepper
Juice of 1/2 a lemon (fish always needs a little citrus)
**I also used a tsp of Greek Seasoning**
Take fish out of the fridge to bring to room temp, placing a a foil lined baking sheet (about 20 mins before cooking).
Preheat the oven to 400.
Spread a THIN layer of the mayo across the filet. Add seasonings, tomatoes, onions and lemon juice.
Bake for about 8 minutes. Enjoy!
