Easiest Vegetarian Recipe to Date

19 days and holding strong…loving my pescatarian way of life <3

Here is one of my new favs….lentils! Low in calories and fat, packed with fiber, vitamins, minerals, healthy carbs and 18g of fiber in one serving, they also help:

  • Increase energy
  • Lower cholesterol
  • Improve heart and digestive health
  • Help stabilize blood sugar

AND, this recipe couldn’t be any easier Trader Joe’s fans šŸ™‚

1 cup cooked organic lentils
3 heaping tablespoons of Trader Joe’s Bruchetta
1-2 tablespoons of feta cheese

That’s it!  Mix together and enjoy with a side salad for the perfect dinner.
I would suggest a bold red with this dish, but maybe not on a Monday šŸ˜‰ or maybe!!
