Easiest Vegetarian Recipe to Date

Here is one of my new favs….lentils! Low in calories and fat, packed with fiber, vitamins, minerals, healthy carbs and 18g of fiber in one serving, they also help:
- Increase energy
- Lower cholesterol
- Improve heart and digestive health
- Help stabilize blood sugar
AND, this recipe couldn’t be any easier Trader Joe’s fans 🙂
1 cup cooked organic lentils
3 heaping tablespoons of Trader Joe’s Bruchetta
1-2 tablespoons of feta cheese
That’s it! Mix together and enjoy with a side salad for the perfect dinner.
I would suggest a bold red with this dish, but maybe not on a Monday 😉 or maybe!!
