Favorite Frittata

2 organic eggs
2 tbsp almond milk
pink salt & pepper to taste
2 tbsp sun-dried tomatoes ( I get mine from Trader Joe’s)
1/4 cup parsley, chopped OR 1/2 cup organic baby spinach
1-2 tbsp goat cheese
2 tbsp chopped sweet onion

Preheat oven to low broil.
In a bowl, whisk eggs, milk, and seasonings. Use cooking spray to coat a cast iron skillet.
Heat onions for 1-2minutes. Add parsley and tomatoes for 1-2 more minutes. Add eggs and cover.
Cook on med-high heat for about 3 minutes. Place cast iron pan into the oven for another 3 minutes or until the top of the eggs are golden and cooked through.

Top with crumbled goat cheese. Serve with a side of roasted sweet potatoes. Enjoy!
