Garden Tomato Dip
2 avocados, diced
1 ball of fresh mozzarella, diced
3 fresh garden tomatoes, diced
2 tbsp fresh pesto (make your own or you can use store-bought)
salt and pepper to taste
Mix all ingredients in a bowl. Serve with crackers, veggies or tortilla chips.
TIP: Can also be eaten over micro greens, spinach or romaine as a side salad.
