Insta White Chicken Chili

2-3 lbs organic chicken breasts
1 cup organic chicken or vegetable broth
3 organic celery stalks, cut in bite sized pieces
1 medium onion
3 cloves garlic, minced
4 organic carrots, cut in bite sized pieces
3 tbsp olive oil
1 can organic diced tomatoes w/ green chilis
2 cans organic white beans (Northern beans)
Salt, pepper, chili powder, cumin, paprika to taste
Lime juice
Avocado
Cilantro
Jalepeno
Hot Sauce

Add oil, cut vegetables, seasonings and garlic to your Insta/Mealthy Pot. Set to saute and let it cook (takes about 15 minutes).
Release pressure and remove top.
In a blender, combine broth and one can of beans.
Place chicken into the pot on top of the veggies. Add the bean/broth mixture, can of whole beans (rinsed), & diced tomatoes.
Add additional spices, if desired.
Set your pot to the meat/stew setting and let it cook (takes about 35 minutes).
Take 2 forks and shred the chicken (it should almost fall apart into perfectly tender, shredded bites).
Stir well to combine with all of the other ingredients.

Serve into bowls and top with diced avocado, sliced jalapeno, lime juice, chopped cilantro, and/or hot sauce.
