Must Try Pizza

Enjoy this recipe on your pizza crust of choice OR use my cauliflower crust for a healthier option.
2 small sweet white onions
2 cloves garlic, chopped
2 tbsp goat cheese
1/4 cup fresh grated parmesan cheese
2 large handfuls organic arugula
1 tbsp olive oil
Place sliced onions and garlic in a cast iron pan. Season with salt & pepper. Cook for about 30-40 minutes to allow caramelization. Remove from heat.
Drizzle olive oil (I used scallion infused olive oil) over the crust. Add onions, & cheese. Bake at 450 for 7-10 minutes.
Remove from oven and top with fresh arugula.
