Paleo Banana Nut Bread

3-4 medium bananas mashed (I used my Kitchen Aid mixer)
1/2 cup almond butter
3 tbsp organic butter
1 teaspoon vanilla
1/2 cup coconut flour
1 organic egg
1
 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
pinch of pink Himalayan salt
1/2 cup dark chocolate chips (optional)

Preheat oven to 350. Mix all dry indregients in a bowl and set aside. Combine bananas, egg, almond butter, butter and vanilla in the mixer. Add dry indredients to wet until combined. Fold chocolate chips into the mixture.

This recipe can be made into muffins or bread. (Note: the bread will not be light and fluffy, but will  be delicious)
For muffins: Spray 12 muffin tins. Spoon batter into each and bake for 15-18 mins.
For bread: Spray bread pan. Scoop batter into the bread pan distributing evenly. Bake for 35-40 mins.

This recipe is delcious with your morning coffee, as a snack for the kids or for dessert.
