Paleo Pumpkin Blender Muffins

These couldn’t be easier to prepare and are great for social gatherings, breakfast, as a snack or treat.

Preheat the oven to 375. Place all of the ingredients into a food processor or blender. Scoop spoonfuls (I used a mini ice cream scoop) into a mini muffin pan and bake for 18 minutes. Done!

1/2 cup organic pumpkin
1/2 cup almond butter
1/4 cup quinoa flour (or almond flour)
1 medium banana
1 large organic egg
1/3 up unsweetened almond milk
2 tbsp vanilla protein powder
2 tbsp 100% pure maple syrup
2 tbsp coconut flour
1 tspĀ vanilla extract
1 tspĀ cinnamon
1/2 tspĀ ground ginger
1/2 tspĀ baking soda
1/2 tspĀ pumpkin pie spice
1/4 tspĀ pink Himalayan salt
