Peanut Oatmeal Cookies

1/4 cup coconut oil
1/3 cup maple syrup
1 teaspoon vanilla extract
1 cup natural peanut butter
3 cups gluten-free oats
1 teaspoon baking soda
1/4 cup dark chocolate chips or raisins
Preheat oven to 350 degrees.
In a large bowl combine maple syrup and coconut oil until creamy.
Add eggs, vanilla and baking soda. Mix well.
Add peanut butter and stir. Finally stir in the oats & chocolate chips.
Place a spoonful of batter on a prepared baking sheet and bake for 10-12 minutes
Recipe yields: 30 cookies, each 115 calories, 7g fat, 10g carb, 4g sugar, 3g protein
