1/2 cup quinoa cooked (yields about 1 cup)
1 large organic egg
1 clove garlic, minced
1 tbsp ground flaxseed + 2 tbsp water mixed
1 -2 tbsp sundried tomatoes
2 scallions, chopped
¼ cup parmesan cheese + some extra to sprinkle on top
½ tsp salt, pepper, oregano, dried basil
Preheat oven to 350. Combine all ingredients in a mixing bowl. Use cooking spray to coat muffin tins.
Spoon mixture to fill each muffin ¾ of the way. Press down firmly with a spoon.
Sprinkle extra parmesan on top and bake for 20-30 minutes. Enjoy naked bites or dip in your favorite sauce.
