Scrambled Avocado & Feta
2 large organic eggs
2 tbsp unsweetened almond milk
1 tsp organic butter
1/4 tsp Pink Himalayan salt
1/2 medium avocado
1 tbsp crumbled feta
1 tbsp chopped chives and/or parsley
Crack eggs into a bowl, add almond milk. Wisk until bubbles form.
Add butter to cast iron skillet until it melts. Add egg mixture to the pan and stir constantly to avoid overcooking. Remove eggs from heat; add salt, avocado, feta, and fresh herbs.
