Simple Sweet Potato Salad
**Truth** Potatoes are GOOD FOR YOU!! It’s all about portion control and choosing healthier versions of recipes (ie – choose the baked potato fries and not the mountain of creamy mashed potatoes).
This recipe was up on my app when I had it a couple of years back. I have had several people ask me for it over the past week, so here it is! Super easy and a definitely a crowd pleaser 🙂 In fact, I am making it this week for my community group.
BONUS: leftovers can be thrown on top of mixed greens the following day for a delicious lunch!
Sweet Potato Salad
3 medium-sized organic sweet potatoes
1 tbsp coconut oil
Salt, pepper & Italian or Greek seasoning blend (about 1 tsp each) or to taste
1/3 cup dried chopped sun-dried tomatoes
1/4 cup fresh crumbled goat cheese
3 chopped scallions
Cut potatoes into bite-sized pieces & place on cookie sheet. Roast at 400 for 25 minutes. Remove from oven & toss with coconut oil and herbs. Mix in a serving bowl with scallions, goat cheese, and tomatoes.
