Spaghetti Squash w/ Avo Sauce

Cut squash in ½ lengthwise and remove seeds
Flip inside face down in a roasting dish and cook in a 400-degree oven for 35 minutes.
Scrape flesh of squash out with a fork to make “spaghetti.”
Add 2 large handfuls of fresh organic spinach to squash and cover to let the spinach wilt.
Top with diced organic cherry tomatoes.
Drizzle with health healthy avocado sauce
