Spaghetti Squash w/ Meat Sauce
During squash season and I love this low-calorie dish, a flavorful replacement for pasta!! Here is a recipe we had for dinner earlier this week.
- 1 lb ground turkey
- 1 jar spaghetti sauce (I use Victoria’s brand – low sodium, low sugar – can be found at Walmart)
- 14 ounce can organic tomato sauce
- salt, pepper, oregano, Italian seasoning, basil
- extra virgin olive oil
- 2 cloves mixed garlic
- 1 spaghetti squash
- 2 cups spinach
- 1-ounce goat cheese
Cut squash in 1/2 lengthwise. Remove seeds. Place faces down on baking sheet and place in 400-degree oven for 35 minutes or until squash can be squeezed easily.
Remove from oven and let cool. If still warm, hold squash with a kitchen towel and scrape the flesh out into a bowl with a fork – making “spaghetti.” Drizzle with 1-2 tbsp olive oil, salt, and pepper.
In a skillet, brown turkey and drain extra liquid/fat. Add minced garlic and seasonings to taste and brown 2 more minutes. Add sauces to meat and simmer for 30-45 mins on very low heat to let flavors come together.
Spoon squash into a dish, top with a handful of organic spinach, meat sauce, and crumbled goat cheese.
*if you like some spice, add hot pepper flakes on top*
