Sweet Potato Goat Cheese Bites
2 large sweet potatoes cut into 1/4 inch rounds
2 tbsp olive oil
kosher salt and pepper
4 oz goat cheese (warmed to room temperature)
2 tbsp unsweetened almond milk
1 tsp rosemary (or alternate savory spice blend)
Preheat oven to 425.
In a medium bowl, combine goat cheese, milk and rosemary until smooth and creamy. Set aside in the fridge.
Toss potato rounds in olive oil, salt, and pepper.
Place rounds on a baking sheet in a single layer. Bake for 10 minutes, flip and bake for an additional 10.
Remove potatoes from the oven and let cool.
Top each round with goat cheese mixture and a spiced pecan.
TIP: Drizzle the top of each potato round with a touch of local honey for some added sweetness.
