Sweet Potato Protein Muffins
1 medium sweet potato, cooked and mashed
3/4 tsp cinnamon
1/8 tsp cardamom
1/4 – 1/2 tsp pink Himalayan salt
2 tbsp vanilla protein powder
1/4 tsp baking soda
1 large organic egg
1 tbsp local honey
1/2 tsp vanilla extract
2 tbsp raisins
1/4 cup chopped walnuts
Preheat oven to 375. Combine sweet potato, spices, protein powder, and baking soda in a bowl. Add the egg, honey, and vanilla and mix. Stir in raisins and walnuts and spoon into muffin tins (sprayed with cooking spray).
Bake for 25 minutes and allow to cool before eating.
