Sweet Potatoes
Sweet potatoes are one of the healthiest vegetables that you can eat and are loaded with vitamin C, fiber, carotenoids and potassium. You can find them in your grocery store any time of the year and it is not necessary to serve them mashed up with brown sugar in a casserole dish! That is the only way I ever had them growing up and I used to hate sweet potatoes because of it.
Now, my entire family loves them. Our favorite sweet potato recipe is so easy and makes a delicious side dish!
Preheat your oven to 400.
Dice 3-4 small to medium-sized potatoes. In a bowl, toss with olive oil, balsamic vinegar, kosher salt and pepper.
Spread an even layer onto a cookie sheet and bake for 25-30 minutes. Enjoy!
