Thoughts for July…
My kids got out of school 3 weeks ago today! Summertime is flying by and we are having a blast; but the past 3 weeks have been a whirlwind and I am ready for some “downtime” in July; some weekends and weekdays with “no plans.”
In between camps and my crazy schedule, we are enjoying later mornings, relaxing by the pool and at the beach, spending time with family & friends, cooking up some new recipes…
Here are the protein pancakes that Kendall and I made this past Sunday morning.
- 3 whole eggs
- 1 1/2 scoops vanilla protein powder (I used Proventive Harmonized Vegan Protein)
- 1/2 cup oats (ground in Magic Bullet)
- 5-6 tbsp unsweetened almond milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Top with TONS of delicious organic berries!

Many of you may be reading this because I was supposed to start the Beachbody 3 Day Refresh yesterday.
So, here is the truth…I looked at my calendar and thought that it would be a better idea for me to begin after the holiday weekend coming up this weekend. I know that I will be enjoying good food, drinks and time with friends and come Monday, July 8th I will definitely feel like I need to REFRESH!
BUT, I will tell you that I have looked over the program thoroughly and I am REALLY excited to start and feel the results.

One more thought for the start of this month….
I spend most of my time through the “school year” and into the summer reading quite a bit!
