Transforming Tuesday Treats
It’s #TransformationTuesday and I want to help you transform your kitchen pantry from baked goods that sabotage your diet to ones that promote health. You really can have treats that are actually GOOD for you and not loaded with sugar and unhealthy fats!
Keeping it clean and delicious in under 10 minutes.
There are 5 things that I always have stocked in my kitchen for when I need to make a sweet treat for an event or just to enjoy on the weekends.
– dark chocolate chips
– cocoa powder
– shredded coconut
– 100% pure maple syrup and/or local honey
– vanilla extract and spices (cinnamon, nutmeg, pumpkin pie spice)
5 additional items that help with baking and just happen to be in my kitchen on a consistent basis are:
– bananas
– natural peanut butter
– coconut oil
– dates
– oats
So, this weekend I went to make no bakes. I had everything mixed together besides the chocolate chips, when I realized I didn’t have any. Someone had gotten into my chocolate chip stash 🙂 These cookies would still be good without the chocolate – but definitely 100% better WITH chocolate!! Isn’t EVERYTHING better with chocolate?
Seeing as baking for me parallels a science experiment; when one thing doesn’t work (or is missing) there has got to be another way. Next best option? I knew I had to have something that would work. I found an organic dark chocolate bar in the cabinet.
PERFECT! Broke it into pieces and added it to my recipe. The cookies turned out great and let’s just say that it is extremely hard to have only one!!!
- 2 cups rolled oats
- 1/2 cup natural creamy or chunky peanut butter
- 1/4 cup 100% pure maple syrup
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips
- 1 1/2 tbsp dark cocoa powder
- 3 tbsp coconut oil
Combine peanut butter, syrup, vanilla, coconut oil and dark chocolate chips in a small pan over medium heat. Stirring constantly until chips are melted – about 2-3 minutes.
Remove from heat and add cocoa powder.
Add mixture to oats. Stir completely and roll into balls.
For best results, chill for 30 minutes before eating!
Enjoy these cookies with your coffee, as a snack or treat 🙂
