Vacation Bowl
1-2 cups mixed organic greens
2 oz smoked wild salmon
1 organic carrot, sliced
2 tbsp organic hummus (I use Roots)
1/2 cup sauteed eggplant & onions (leftover from weekly food prep)
1/4 avocado
1 oz sliced manchego cheese
A drizzle of white lemon balsamic vinegar (I get mine from The Enchanted Olive)
