Weekend Cooking
I love to take the time that I have on the weekends to whip up some new recipes…
Doesn’t this look fantastic?? After a busy day yesterday, I ran out of time to make this pizza but am planning on making it today.
I am going to alter the recipe slightly to use what I have in the kitchen – caramelized onions, goat cheese, and arugula.
I did, however, have a chance to make some delicious breakfast cookies. YES, you really can have cookies for breakfast!! My hubby and son woke up to the house smelling fabulous and being invited down to the kitchen for cookies at 9 am 🙂
This recipe makes a TON of cookies; so you can make them ahead and have them all week!
Yesterday’s batch, I made with almond butter and chopped dried apricots. The apricots were a big hit and added some delicate sweetness to each bite. I honestly think that peanut butter in this type of cookie would have more flavor than the almond butter. Next time around I will do a peanut butter & coconut combo.
