White Bean & Pepper Dip

1 can organic cannellini beans (drained and rinsed)
2 tsp Greek Seasoning
1 tsp sea salt
1 tsp ground cracked pepper
1 tbsp extra virgin olive oil
1 red pepper – diced
½ sweet Vidalia onion – diced
1/4 cup Feta cheese

In a Pyrex dish: drizzle olive oil to cover the bottom. Layer beans, spices, diced red pepper, diced onion and top with feta. Serve with blue corn chips, celery sticks or as a side dish.

TIP: add some healthy fats to this dish with 1/2 diced avocado.
