One Pan Sausage & Veggies
**Cut all vegetables and sausage into the same bite-sized pieces**
1-2 cups broccoli florets
1-2 cups cauliflower florets
1 medium red and yellow pepper, chopped
1 medium onion, chopped
1 package of organic turkey or chicken sausage links
3-4 T avocado oil
1 tsp each paprika and garlic powder
1 T each dried oregano and parsley
Pink Himalayan salt and fresh pepper
Optional: red pepper flakes
Preheat oven to 400.
Put all ingredients onto a baking sheet lined with aluminum foil.
Pour the oil and seasonings on top and toss to coat.
Bake for 15 minutes.
Remove the sheet from the oven and stir sausage and veggies.
Return to the oven for an additional 15 minutes.
TIP: Can be served over brown rice or cauliflower rice and topped with freshly grated parmesan cheese.
This recipe can be altered according to taste by replacing or substituting vegetables (ie – use fresh green beans, Brussels sprouts, butternut squash, asparagus, cherry tomatoes, red potatoes, zucchini, etc.)
