Another Insta Delicious Meal

2 lbs organic chicken breasts
4 organic carrots, cut into bite-sized pieces
3 organic celery stalks, cut into bite-sized pieces
1 medium onion, chopped
3 cloves of garlic, minced
1 tbsp organic coconut oil
1 28oz can organic crushed tomatoes w/ basil
1 bag frozen riced cauliflower
3/4 can organic full fat coconut milk

Spice mixture: 1/2 tbsp ground ginger, 1-2 tbsp chili powder, 1 tbsp curry powder, 1 tsp roasted garlic powder, 2 tsp sea salt, fresh ground pepper.  Mixed in a bowl and set aside.

Place carrots, celery, garlic, onion and coconut oil in your InstaPot and set to saute.
When those are done (about 10-15 minutes) remove the top. Add chicken, canned tomato, cauliflower, coconut milk and spice mixture. Stir to combine and set on manual high pressure for 30 minutes.

Remove the chicken breasts to place on a cutting board and shred with a fork. Return chicken to the pot and stir to combine.

Serve topped with diced avocado, chopped cilantro & fresh lime juice.
This also makes a deliciously complex meal served over brown rice and sprinkled with a small amount of cheddar cheese.

Cacao Berry Acai Bowl

BOWLS!  There are endless options and varieties, but the key to the creaminess is using frozen fruit.
If you aren’t a fan of bananas, you can sub with frozen berries. Despite the crazy talk that you may hear, bananas are GOOD FOR YOU. Never throw out ripe bananas – always cut them up and freeze them for smoothies, bowls or tasty desserts.

1 cup of ice
1 frozen banana
1-2 tsp acai powder
1 tsp maca root powder
1 serving protein powder of choice or collagen peptides (for this one I used vanilla Afterburn)
1 tbsp organic PBFit
1 large handful of organic baby spinach
1/2 cup – 3/4 cup water or almond milk

Blend all ingredients in a high power blender until combined and creamy.
Top with raw cacao nibs and fresh berries.

Tip: This bowl provides a good amount of protein and tastes like a treat with your morning coffee 🙂 You can also top it with chia seeds, shredded coconut and/or chopped nuts.
