Feta Stuffed Mushrooms

It is the holiday season!!

Christmas trees officially allowed to be up and Christmas music is appropriately in the air. Calendars are loaded with events, parades, gatherings, baking, and food prepping.

Are you searching for an easy-to-prep and relatively healthy recipe for your next holiday party?? If so, try this one. It is always a hit!

  • 8 medium-sized mushrooms
  • 3 mushroom stems
  • 2 tbsp reduced-fat feta
  • ½ tbsp parsley
  • 1-2 tsp lemon juice
  • ½ tsp lemon zest
  • ½ tsp extra virgin olive oil
  • 1/8 tsp cayenne pepper

Preheat oven to 425.
Wash mushrooms and pull off stems, saving two.
Add remaining ingredients and 3 minced stems in a food processor. Mix well and divide among mushroom caps. Bake 13-15 minutes.

TIP: If you want to make a heartier dish, add ground organic turkey to the mix!
