YES!!! We can have cookies for breakfast 🙂
1/4 cup organic coconut oil
1/2 cup 100% pure maple syrup
2 organic eggs
1 tsp vanilla
1 cup nut butter (peanut, almond, cashew)
2 1/2 cups GF oats
1 tsp baking soda
1 tsp cinnamon
1/4 cup chocolate chips, raisins, OR any dried fruit chopped
1/4 cup chia seeds
1/4 cup sunflower seeds
1/4 tsp pink Himalayan salt
Preheat oven to 350. In a large bowl, combine oil, syrup until creamy. Whisk in the eggs, vanilla, baking soda, salt, and cinnamon, and mix thoroughly.
Mix in the nut butter. Add the oats and seeds until evenly combined.
Place spoonfuls on a prepared baking sheet. Bake for 10-12 minutes.
