Instant Pulled BBQ Chicken
1 cup apple cider vinegar
3/4 cup water
2 tbsp minced garlic
1/4 cup organic ketchup
2 tbsp Dijon mustard
2 tbsp organic molasses
spices – sea salt, pepper, smoked paprika, crushed red pepper
Place 4 organic chicken breasts in pressure cooker (InstantPot or Mealthy Pot or whatever you use).
Whisk all sauce ingredients together and pour over the chicken.
Set to cook on poultry setting.
When chicken is done cooking, shred with 2 forks and serve over lettuce with your favorite salad toppings, stuffed into 1/2 of a sweet potato sprinkled with some goat cheese, on a sandwich or in a taco shell for some delicious BBQ chicken tacos!
