Summer Inspired Creamed Corn
4 ears corn, grilled and kernels cut from cob
½ cup red pepper, diced
½ cup green pepper, diced
¼ cup sweet onion, diced
1 cup full fat coconut milk
¼ teaspoon salt
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 tsp chili powder
1 tsp coconut oil
**optional for heat: crushed red pepper**
In a skillet, sauté onions and peppers in coconut oil until soft.
Add corn kernels, coconut milk and seasonings. Bring to a boil, then adjust the heat to maintain a simmer.
Cook, stirring occasionally for about 12 to 15 minutes.
Stir in cilantro, lime juice and crushed red pepper.
