Cauliflower Parmesan

1 large cauliflower head
2 eggs
1 tbsp water
1 cup flour (use almond for gluten free)
2 tsp Italian seasoning
1 tsp garlic powder
2 tbsp. olive oil
Salt, pepper and red pepper flakes (optional) to taste
1 cup marinara sauce
1 cup mozzarella
Fresh basil

•Preheat over to 400. Wash and cut cauliflower into 1 ½ inch “steaks”
•In a shallow bowl, whisk together eggs and water
•In another shallow bowl, mix flour and seasonings
•Dredge cauliflower into the egg and then the flour mixture
•Place “steaks” on a baking sheet and drizzle with olive oil. Bake for 10 minutes
•Remove from the oven, flip the “steaks” and drizzle again with olive oil and bake for another 10 minutes
•Remove baking sheet from the oven and turn the oven to broil
•Top the “steaks” with marinara and cheese and broil for 3-5 minutes
•Top w/ fresh basil
Serve with side salad, vegetable or pasta of choice!
