Mother’s Day Chicken Salad
2⁄3 cup olive oil or avocado mayonnaise
2 tablespoons lemon juice
1⁄2 tsp salt
1⁄4 tsp ground pepper
2 cups diced cooked organic chicken (or canned)
2 small red apples, diced
2⁄3 cup celery, diced
1⁄2 cup chopped walnuts
1⁄2 cup sliced seedless grapes
•In a bowl, combine the mayonnaise, lemon juice, salt and pepper.
•Add the chicken, apples, grapes and celery.
•Toss to combine all ingredients and flavors thoroughly.
•Cover and refrigerate for at least 30 minutes before eating.
•Stir in walnuts just before serving.
