Vegetarian Quesadillas
Prepare for a delicious snack or meal. These are packed full of vitamins K and A, B2 and B6, vitamin C, calcium and potassium.
INGREDIENTS:
1 large tomato, sliced
1½ cups baby spinach
1 tbsp. pesto
½ cup shredded cheddar
½ cup shredded mozzarella
2 whole grain or corn tortillas
Seasonings: sea salt, pepper, cumin, red pepper flakes to taste
DIRECTIONS:
•Spread a layer of pesto over ONE tortilla
•Add a layer of both cheeses
•Add tomato slices and spinach and another layer of cheeses
•Spray a pan and place over medium heat
•Place the tortilla in the pan and put the 2nd tortilla on top
•Cover and cook for about 4 minutes
•Remove top and carefully flip the quesadilla, heating for another 4 minutes until the cheese has melted.
TIPS:
If you choose tortillas that are WHOLE GRAIN – pick ones with the least amount of ingredients on the list.
If you choose corn, they are smaller but a healthier option, as they are less processed.
Add organic black beans to your quesadilla for some added flavor, protein and fiber.
Serve with your favorite salsa and/or guacamole.
