Mexican Summer Salad

It is very rare that I precisely measure when I am putting my recipes together.
So, always keep in mind, it could be a “little more” or “a little less.”

1 can organic black beans
1 can whole corn kernels (Trader Joe’s)
1 can organic fire roasted tomatoes
1/2 cup feta cheese
2 ripe avocados, diced
A sprinkle of sea salt and some fresh cracked pepper
Juice of 1 lime
1 tbsp Trader Joes taco seasoning

Combine all ingredients in bowl and place in the fridge for at least 30 minutes before eating. Serve as a side dish or with chips.
