No Bake PB Chocolate Thumbprints

1 1/2 cups peanuts (I love the sweet/salty combo and used these)
1 tsp vanilla
3 tbsp natural peanut butter
11 pitted organic dates

Chocolate Filling:
1/4 cup organic coconut oil, melted
1/4 cup raw cacao powder
1/2 tsp vanilla
2 tsp 100% pure maple syrup


In a small bowl, combine chocolate filling ingredients thoroughly.

Process nuts in a food processor until very fine.
Add peanut butter, dates, vanilla until a dough starts to form.
Roll into balls and flatten the center with your thumb.
Place balls on a plate and spoon chocolate filling into the thumbprint holes.
Chill in the fridge for 30-45 minutes and ENJOY!
