One Skillet Lasagna

1 tbsp extra virgin olive oil
1 onion (chopped)
1 tbsp minced garlic
½ tsp red pepper flakes
1-2 tsp oregano
Salt and pepper
1 pound organic ground turkey or grass-fed organic ground beef
**OPTIONAL: Use zoodles OR 8 whole wheat lasagna noodles (broken)**
1 8-ounce can low-sodium tomato sauce
1 28-ounce can diced tomatoes w/ basil
⅓ cup water
¾ cup mozzarella cheese
1 cup 1% cottage cheese or ricotta

Add olive oil & chopped onion to a skillet (medium heat) and cook about 4 minutes. Stir in the garlic and seasonings.

Add in the meat, breaking into pieces and cooking until no longer pink.

Layer the zoodles or noodles over the meat and pour the tomato sauces and water over the pasta.

Cover and bring the dish to a simmer, stirring occasionally, for about 20 minutes or until the pasta is done.

Take the lasagna off the heat and roughly stir in the cheeses.

Tip: Top with parmesan and basil for added flavor.
