Roasted Cabbage Wedges

1 medium head of green cabbage, cut into 1 inch rounds
Olive or avocado oil
Sea salt & pepper
Italian seasoning

Heat oven to 400. Cut cabbage into rounds and place on a baking sheet. Sprinkle with seasonings and drizzle with oil. Bake for about 20-25 minutes (until the edges start to crisp and brown).

Tip: Serve plain or top with some crumbled feta cheese and/or bruschetta.
