Pumpkin Spice Kettle Corn
12 cups of organic air-popped popcorn
1/3 cup coconut sugar
3 T coconut oil
1/2 tsp pink salt
1 T pumpkin pie spice
1 tsp vanilla
Preheat oven to 300.
In a small saucepan, combine seasonings, sugar and coconut oil until sugar is dissolved. Add vanilla.
Place popcorn in a shallow baking dish. Drizzle the sugar mixture over the top and toss to coat evenly.
Bake uncovered for 20 minutes and transfer to another pan to cool.
Store in an airtight container.
