Pumpkin Chili
1 pound organic ground beef
1 green pepper, diced
1 onion, diced
1 T chili powder
1 T cumin
1 tsp garlic powder
1 tsp onion powder
Salt & pepper to taste
1-2 T olive oil
1 (15oz) can pumpkin puree
1 (15oz) can pinto beans
1 (15oz) can black beans
1 (28oz) can tomatoes w/ chilies (diced, not drained)
Combine all seasonings in a small bowl and set aside.
In a large pot, sauté onion, peppers & ground beef. Add seasoning mixture and cook thoroughly (about 15 mins) Add pumpkin, beans and tomatoes. Cover and simmer about 15-20 mins. Top with favorite toppings.
Add desired toppings:
jalapenos, Greek yogurt, cheddar cheese or crumbled feta, diced avocado, cilantro, crushed organic tortilla chips
Tip: This recipe can easily be converted into a vegetarian dish by removing meat and adding more beans & veggies.
