Pumpkin Spiced Chickpeas
A great source of fiber during pumpkin season!
1 can organic chickpeas, rinsed and drained
1 T avocado oil (you can sub olive or coconut oil)
2 tsps 100% pure maple syrup
1/2 tsp pumpkin pie spice
1/4 tsp pink salt
Heat oven to 400° and line a baking sheet with parchment paper.
Place chickpeas in a bowl, drizzle with oil and syrup.
Add pumpkin pie spice and salt. Toss to coat and spread onto the baking sheet.
Roast 30 to 35 minutes, tossing after 15 minutes, until crispy and golden brown.
Cool completely before serving.
