Enjoy your eggs this Easter with this simple curried egg salad. Prepare as a side dish, serve with crackers, on top of a rice cake or in a lettuce wrap!

8 organic hard-boiled eggs
1/2 cup organic celery – diced
4 T avocado mayo
1 T Dijon mustard
1 tsp apple cider vinegar
1 T curry powder
¼ cup dried currants or dried cranberries
salt and pepper to taste
